Origin / Development Oil: Council of the “Seranía”, Sierra Espadán foothills; Castellón (Valencia) SPAIN.
Composition: 100% natural olive juice, without additives or preservatives.
Coupage: 25% Borriolenca, 20% Canetera, 15% Farga, 10% Serrana de Espadan (Sevillenca), 20% Arbequina, 10% (Picual, Manzanilla, Regué). 70%  autochthonous.
Superior quality olive oil obtained directly from olives and solely by mechanical means.
Cold extraction, filtered, without washing and natural decantation.

TASTING NOTES
Extra virgin olive oil, composed of a blend of varieties where the varieties Serrana Espadán, Borriolenca, Canetera, Forge and Arbequina predominate 70% indigenous to the area.
We are facing a superior category virgin olive oil, balanced aromas and flavors, with mean intensities of bitter and spicy where stands the sweetness.
Observing the oil in a glass of clear glass, shown the greenish with an ochre hue.
As you breathe in cup olive oil perceive an intense fruity, when that happens the smell of green grass with aromas of almond alloza walnut and artichoke.
In the tasting, soft-bodied texture is appreciated, envelope, harmonious. After a few minutes a positive sensation of astringency appears, it is a balanced olive oil with personality, varietal balanced proportions, being able to appreciate the characteristic aromatic nuances of each and pleasantly surprised to consumer for its sweetness, softness, strength and harmony.

CHARACTERISTICS OF THE OIL ZONE
Origin / Olive oil elaboration: The Highlands (Sierra de Espadán); Castellón (Valencia) Spain.
Predominant varieties: Serrana de Espadán (Sevillenca) Borriolenca, Canetera, Farga, Manzanilla, Regué and Villalonga, 70% of this oil is composed of native varieties of this area.
Sector: Traditional Agriculture medium sized mill.
Features of this olive oil: Low-medium acidity, intense own flavor, smooth body, enveloping, spicy sweet and harmonious, fine fruity and reminiscent of freshly picked green olives and apples, aroma of ripe truffles, figs and almonds, a delight to the palate, yellow-green color.
Serrana variety, also known locally as Sevillenca, only in the foothills of the Sierra de Espadán, within the province of Castellón, gives one of the best Spanish extra virgin olive oils. Oil being balanced, fresh, soft, fruity flavour where stands its sweetness, high demand for haute cuisine. The production of these indigenous varieties, are very limited in dry farming on the Mediterranean coast a short distance from the sea, altitude between 500-700 meters, with softer and less extreme climates, with a storm volume (400/500 mm) suitable for cultivation in the Valencian Community.
Dosing: To take the oil, first put off the glass stopper and instead put the dispenser
cap attached to packaging. Serve comfortably and without getting dirty.
